Coconut Banana Cake Recipe from CocoTherapy

For Maggie's birthday last month, I baked her a Coconut Banana Cake from CocoTherapy's recipe. This cake is not only delicious for pets and humans, but fantastic for pets with allergies. Coconut Banana Cake by CocoTherapy

1 cup organic coconut flour (can get in health food stores)
1/2 cup coconut milk/cream
1/2 cup CocoTherapy coconut oil (melted)
12 eggs
3/4 cup organic coconut sugar (might be hard to find). You can use light brown sugar instead
1 tsp. salt
1 tsp. baking powder
1 tsp. vanilla
3 mashed large bananas (drizzle some honey with the mashed bananas to sweeten)

Frosting
Cream Cheese whipped with some honey to lightly sweeten

1. Combine coconut oil (melted), coconut milk, eggs, vanilla, sugar, salt.
2. Combine/sift together coconut flour and baking powder.
3. Mix wet & dry indgredients into batter, until there are no lumps.
4. Fold in mashed bananas w/ honey.
5. Pour batter equally into two greased 8" or 9" cake pans.
6. Bake at 350 F for around 45 minutes (or until kniffe comes out clean).

Cool and frost. Enjoy!
